Do you need a quick, delicious and easy recipe for dinner tonight? You can make this in the morning and bake later for dinner. Add a simple green salad topped with black beans and tossed with a creamy cilantro dressing. For added crunch and flavor crush a few of our chipz over the top.
4 Split skinless chicken breasts
1 dozen white corn tortillas
1 - 26 oz. can cream of chicken soup
4 oz. can diced green chilies
8 oz. container of sour cream
2 cups of shredded Monterey Jack cheese
3 green onions thinly sliced
Garlic salt to taste
Pre-heart oven to 350
Boil chicken breasts, cool and then shred the chicken.
(Tip: Use two forks to shred; put one in the chicken breast and use the other to pull apart the chicken).
Add green onion, a few shakes of garlic salt, 1 cup of cheese and ½ can of the cream of chicken soup. Set aside.
In a separate bowl stir together the remaining cream of chicken soup, 8 oz. container of sour cream and the diced green chilies. Set aside.
In a skillet heat up the canola oil; add just enough to coat the tortillas. Soft fry quickly just to soften the tortillas. Place tortillas on plate lined with a paper towel.
9x13 baking dish – put a little of the sauce to coat the bottom of the dish
Take one tortilla at a time and fill with about 2 tablespoons of the chicken mixture. Roll tightly and place face down in the baking dish. Repeat until tortillas and or filling is gone.
Will make between 8-12 enchiladas depending on how much filling is used.
Pour sauce over the enchiladas and top with the remaining shredded cheese.
Cover with tin foil and bake for about 20-25 minutes. Remove foil and bake until cheese
is hot and bubbly.

Got Hummus? This is a great spin on traditional Hummus for foodies who like
to turn up the heat and add a little spice to a delicious snack dip.
Serve with our Parmesan Garlic chipz .
3-4 roasted garlic cloves peeled (See below for roasting directions)
2-15 oz. cans of garbanzo beans, drained and rinsed
Juice of 1 lime
1/2c good olive oil
1c cilantro leaves
2 large roasted jalapeños, stems and seeds removed. (If you want more heat, leave in some of the seeds)
Roast jalapenos direct on stove flame. Roast on low heat until skins begin to blacken.
Combine all of the ingredients together in a food processor or blender until smooth. If mixture is too thick, add more olive oil (or water) by the tablespoon until desired consistency is achieved. Serve at room temperature or refrigerate until cold. I prefer at room temperature because the flavors are more intense.
Top Hummus with a drizzle of good olive oil and toasted pumpkin seeds. Serve with our Parmesan Garlic or Spice-z Tortilla chipz for a truly delicious snack. This is a great recipe for entertaining. You can also roast an additional jalapeno, chop fine and add on top.
TO ROAST GARLIC:
Pre-heat oven to 300. Cut off the top of the whole garlic clove. Place entire garlic clove on a sheet of foil. Drizzle with a good amount of oil and wrap up tightly. Bake on cookie sheet for about 20 minutes or until garlic is soft. Squeeze out soften cloves and use the remaining cloves as a spread on toasted crostini.

A light but delicious soup you will love. Full of flavor and topping options so you can enjoy your meal just the way you like it. This is a soup to serve any time of year because of the light broth and fresh ingredients. Serve or top your soup with crunched up chipz Happen Tortilla Chipz for added flavor. The parmesan from the chipz melts in to the soup making it OH SO delicious.
1 10 oz. can enchilada sauce (choose from mild to hot)
1 ½ lb. shredded chicken breast (2 cups)
1 can stewed tomatoes with garlic crushed
4 oz. can chopped green chilies
2 cloves garlic minced
2 cups water
1 can chicken broth
1 t chili powder
1 t salt
1 t pepper
1 bay leaf
1 can corn drained
¼ cup chopped cilantro
I cook my chicken in the crock pot all day reserving the juices for the soup. If you are in a hurry you can boil or roast your chicken, let cool and shred.
I then add all ingredients back in to the crock pot except the chicken on low for 6 hours.
Add chicken for 1 hour before serving. IF cooking on the stove top, follow the same as above but cook for about three hours or so and then add the chicken back in for another hour.
Garnish soup with chunks of avocado, grated cheese, tomatoes, sour cream and of course chipz Happen® tortilla chips.
Fast, Flavorful Five Ingredient Guacamole

Are you a GUAC fan? This is a very simple recipe that can be served for any occasion. Serve with our Parmesan Garlic or Spice-z chipz and you have a home run appetizer. This GUAC is also great on a salad with fresh lemon juice as a dressing topped with a little fresh salsa.
3-4 Ripe avocados
1 Medium size tomato – cut in half, seeds removed & diced in to small pieces
3 Green onions – finely chopped
2-3 TBSP finely chopped cilantro (Be sure to rinse and remove stems)
A couple dashes of garlic salt, squeeze of lime juice and dash of pepper
Peel and chunk avocados into bite size pieces and place in bowl. Smash a little but keep the pieces chunky. Add in the tomato, green onions and cilantro. Gently mix together. Depending on how much garlic salt you enjoy start with a little and add to meet your desired flavor. Add the pepper and lime juice to add flavor but also to keep from turning brown.
Make right before your guests arrive so it is at room temperature and fresh. Nobody likes brown GUAC.
If you like it Spice-z, add some minced jalapeno for heat.
